Hand harvested, destemed into concrete egg where it is fermented on skins & hand plunged daily. Once malo lactic fermentation complete, the skins are dug out of the egg for basket pressing. Fresh wine is transfered into the other concrete egg for resting. After three months the wine is simply racked for hand bottling at the winery.
